Quinoa pancake patties

A pancake pattie really just depends how much flour or milk you put in. More flour you get closer to patties more milk its more like a pancake. Feel free to experiment.

 

3 cups of cooked quinoa

2 cups of coconut milk(so delicious original)

4eggs

1 tsp salt

1 tsp pumpkin spice or you can do ½ tsp nutmeg ½ tsp cinnamon

2 tbsp honey

¼ cup warm coconut oil

¾ cup to 1 ¼ cup coconut four depends on consistency desired had the kind of coconut flour you have. Some brands seem to absorb more for some reason.

 

Mix all ingredients together except coconut flour. Once they are all mixed slowly add in coconut flour. The runnier the batter the thinner your pancake will be.

 

Fry in non stick pan using coconut oil

It is hard to tell when these are done so cook on low so there not black like one of mine in the pic.

Flip carefully the dryer the patties are the more crumbly they get. I ate mine the first time with blueberries on top and the second with fried eggs, and snacked no leftovers plain,but up to you. I think there sweet, but I don't eat a lot of sweets and don't like syrup.
