The Husband was missing Mexican Food
Still Gluten Free BUT Not Dairy Free or Paleo
Here is what I came up with. Little prep and Fast.
Refried beans(canned or home made)
Chunky tomatoes (Canned or fresh) about 1 cup
Garlic about 1 tsp
Cheese about 1 ½ cups
Avocado on top
Pre heat oven to 375F
Take a oiled glass 8'x8' dish or bigger I didn't do measurements because its really to desired thickness.
So have fun with it its pretty hard to mess up I think, but if your distracted or theres an earthquake anything can happen.
If you want onions cook them now on low and cook garlic with them.
Lay down your corn tortillas over lapping so that nothing leaks through I did about 6 small ones.
With a spatula spread your refried beens to desired thickness.
Take your tomatoes and mix your garlic in or cook garlic with your onions.
Sprinkle your tomatoes/garlic/onions
sprinkle a little cheese
tortillas you can do 4 tortillas this time if you want it thiner or stick with 6
beans, tomatoes, garlic, onion, cheese as many times as you want think 3 or 4 layers is good
In your last layer include salsa or hot sauce and top with lots of cheese.
Cook for about 10 to 15 min or till cheese is melted
Top with avocado or something green to make it pretty.
