Taco/Tostadas Squash Style

If your looking for a festive meal here you go.

This dinner feels like a summer dish to me even though butternut squash is technically a winter squash.

 

Butternut Squash (put in oven first then do toppings and meat)

 

slice short ways to make disks.

Coat with a little olive oil.

Spread them out on a pan the bigger the pan the better.

oven 375F 30 minuets

flip half way through. If oven is hotter on one side rotate the tray.

 

Toppings:

 

1 onion chopped

1 tbsp garlic minced

1 red bell pepper chopped

2 zucchini chopped

 

In a skillet with a bid of oil cook onions till translucent.

Add in garlic and bell pepper and zucchini till zucchini and bell peppers are soft and cooked through.

 

Meat:

 

1 lb Ground beef

½ cup tomatoes

2 tbsp chili powder

1 tsp paprika

1 tsp cumin

 

In a skillet break apart meat

Add in Tomatoes and spices.

Cook till meat is done.

If meat is too greasy you can drain it.
