This meal was helpful this week since my husband and I both worked long days, and I didn't want to start cooking dinner at 7pm. So I packed my Crockpot full to get as many meals as possible out of it. I actually didn't have time to put veggies in a hour before it was done, so we had salad most nights. Hope you enjoy.
7 Potatoes quartered
1 yam cubed
1 onion your choice diced or in big pieces
4 tbsp tomato paste
2 cups chunky tomatoes(I used canned)
2 cups pasta sauce
1 cup quinoa
2 cups water or broth
1 lb of ground beef
1tbsp chili powder
2 tsp paprika
½ tsp cumin
1 tsp salt
veggie of your choice:
peas, or broccoli, or...(Frozen)
Warning not all Crockpot's are created equal, size and efficiency may vary.
Chop and put all your ingredients in except for the ground beef.
Mix spices into beef or mash with your hands(thats what I do)
Now mix everything.
Put the lid on.
Put your temp to high for 4 hours or on low for 8 hr.
This will give you a nice dark rich sauce and soft potatoes.
After 3 hours add in your veggies.
You can leave out the quinoa if you want and only put a cup of water.
You can chose to just make a meat sauce and leave out the potatoes and cook to desired darkness of sauce. Maybe only 3 hr on high. You could discard quinoa if you want in this just sauce option.
