I'm So excited about these tortillas! They didn't crack!

Swaddling your burrito like a baby doesn't quite work, but you can totally taco.


1 ¼ cup of cassava flour

¾ cup coconut flour

¼ cup potato starch

1 tbsp flax

1 tsp salt

2 tbsp & ½ tbsp olive oil

1 egg

1 ½ cup hot water

½ tsp paprika


mix your dry ingredients in a large bowl.

Add in the olive oil and egg in the center of the dry ingredients and mix them.

Then and the hot water and stir till it is mixed and in a ball.

To roll them out use a fine powdered starch like tapioca starch, cornstarch, potato starch; Your choice.

I don't own a rolling pin so I used my (clean& empty) Nalgene.

Fry them in a skillet.

I coated my skillet several times with coconut oil while I cooked.

I didn't time the rest of my dinner well so to keep the tortillas warm while I finished cooking I made a giant foil packet (fold 2 pieces together)and used paper towels inside to space out the tortillas.
