Smokey Stuffed Acorn Squash

1 small onion

1 tbsp minced garlic

½ red bell pepper

1 lb ground beef

4 or 5 mushrooms

3 cups Frozen kale

1 tbsp basil

1tbsp smoked paprika (regular works too)

1 tsp salt

 

 

 

Cut Acorn squash in half's and de-seed them

I put a little olive oil on the inside and lightly dashed some smoked paprika and chili powder over them, for extra flavor

Bake acorn squash in oven at 400ºF for about 20 min

 

In a large deep skillet, cook the filling

Chop the onion, bell pepper, mushrooms (mine were baby portabellas)

Start to cook the onions and bell peppers first until they are soft (and kale if you are using fresh kale)

Add in the ground beef, garlic, basil and smoked paprika, salt, and sliced mushrooms

Once the meat has started to brown, add in the kale (if frozen)

If you are using fresh kale I would put it in the pan first with the onions and bell peppers

Cook and stir until meat is cooked

 

Assemble and serve
