I have two Versions for you. First is not as healthy as the second. First is Orange Chocolate Oatmeal Cookies I made for my husband. Second Version I made for me, Orange Coconut Cookies with “Chocolate” Drizzle. Both gluten free and mine are also dairy free. Really you can make both dairy free if you use Enjoy Life Chocolate chips Which are dairy free, nut free, and soy free. I hope you enjoy!
Orange Chocolate Oatmeal Cookies
1 ¾ almond Flour
1 tbsp flax meal
½ tsp baking powder
½ cup white sugar
½ cup brown sugar
1 tbsp chia seeds
¼ cup oil (coconut or canola)
1 tsp Orange flavoring
¼ cup water
1 cup oatmeal
½ chocolate chips
bake at 375ºF for 10-12 minutes
Mix ingredients in order listed above.
You can either put chocolate chips in the batter or just melt some and drizzle on top or do both.
I just put some chocolate chips in a mug and put them in the microwave to put on top of the cookies after there cooked. If its not pouring thin enough slowly add in some coconut oil or canola to thin it out.
Spoon batter onto greased cookie sheet.
Flatten them a bit so they cook evenly.
Place in oven, wait, cool for 10 min, and enjoy.
Orange Coconut Cookies with “Chocolate” Drizzle
Safer Healthier Version
1 ½ cup almond Flour
½ cup coconut Flour
1 tbsp flax
½ tsp baking powder
1/4 cup maple syrup
2 tbsp chia seeds
¼ cup oil (coconut)
1 tsp orange flavoring
¾ cup Toasted coconut flakes
2 tbsp enjoy life chocolate chips
325ºF for 10-12 min
Mix your dry ingredient first then add in you eggs, oil, flavoring, and coconut flakes.
Mix it all
Then on a greased cookie tray spoon on small mounds of dough.
If cookies are too big they don't cook in the middle. About 1 ½ in diameter will work.
They don't spread much so smash them down to make it flat.
Place in oven and wait.
For the Chocolate drizzle
Put some chocolate chips in a mug and put them in the microwave to put on top of the cookies after there cooked. If its not pouring thin enough slowly add in some coconut oil to thin it out.
You really need to watch these they burn easy because of the maple syrup.
Which is why you should cook these on the lowest shelf in your oven and remove from cookie sheet as soon as you can to let them cool.
