Mint Chocolate Chip Cookies

These are a refreshing twist on traditional chocolate chip cookies and they're gluten free, dairy free and ultra safe, meaning I can eat them. They also go great with mint chocolate chip ice cream.

My favorite brand of ice cream is Coconut Bliss.

 

1 ½ cup almond Flour

½ cup coconut Flour

1 tbsp flax

½ tsp baking powder

½ salt

1/4 cup maple syrup

2 tbsp chia seeds

¼ cup oil (coconut)

1 egg

1 tsp mint flavoring

½ cup enjoy life chocolate chips

 

 

375ºF for 10-12 min

Mix your dry ingredient first then add in you eggs, oil, flavoring, and coconut flakes.

Mix it all

Then on a greased cookie tray spoon on small mounds of dough.

If cookies are too big they don't cook in the middle. About 1 ½ in diameter will work.

They don't spread much so smash them down to make it flat.

Place in oven and wait.
