Memorial Day Celebration Recipe Collection

Remember Memorial Day isn't about barbecue but if your remembering includes barbecue here are some festive recipes for your festivities.

Or if you want that BBQ taste with out the grill these burgers and chicken still work. They are gluten free and you wont miss the bun.

I have also included some delicious desserts.



BBQ Sauce


½ cups chicken broth

2 can tomato paste

½ onion

2 tbsp minced garlic

2 tbsp honey

1/2 tbsp chili powder

1/2 tsp cumin

1 tsp salt

1 tbsp vinegar

1 tbsp mustard


simmer 20 min

You will get the best flavor if you let it sit over night(in fridge).


BBQ Sauce Burgers


1 lb ground beef

1 tbsp almond meal

1 egg

1 tbsp garlic

½ tsp chili powder

½ tsp smoked paprika

1 tsp salt

3 tbsp of BBQ sauce

¼ cup of minced mushrooms

½ small onion chopped




For The Bun


I took a yam and sliced it into disks and grilled them in a George foreman grill.

It only took about ten minutes. But if you have a lot of people to serve all at once baking a bunch in the oven works too.



I also took a romaine lettuces leaf and wrapped it around




You can do both or just one up to you.


I used more barbecue sauce on top of the burger instead of ketchup

So much flavor!




Mash together all your ingredients and shape into patties.

We grilled ours outside but in the pan inside works too.

Chicken Breasts

BBQ Sauce


Make BBQ Sauce (above) the night before for best flavor

Place your two ingredients in a zip lock bag for at least 2 hour or over night in the fridge

And Grill

Or bake

With foil over the greased dish for the first 15 min

Then remove foil till cooked through.

About 30 min total but depends how much chicken your doing at 375ºF




Mint Chocolate Chip Cookies


These are a refreshing twist on traditional chocolate chip cookies and they're gluten free, dairy free and ultra safe, meaning I can eat them. They also go great with mint chocolate chip ice cream.

My favorite brand of ice cream is Coconut Bliss.


1 ½ cup almond Flour

½ cup coconut Flour

1 tbsp flax

½ tsp baking powder

½ salt

1/4 cup maple syrup

2 tbsp chia seeds

¼ cup oil (coconut)

1 egg

1 tsp mint flavoring

½ cup enjoy life chocolate chips



375ºF for 10-12 min

Mix your dry ingredient first then add in you eggs, oil, flavoring, and coconut flakes.

Mix it all

Then on a greased cookie tray spoon on small mounds of dough.

If cookies are too big they don't cook in the middle. About 1 ½ in diameter will work.

They don't spread much so smash them down to make it flat.

Place in oven and wait.



Dairy Free Ice cream


Dairy free,sugar free, two ingredients goodness.

Banana based ice cream has a nice creamy texture and counts for eating fruit, which is good for you.


2 pre-frozen bananas

1 cup of fruit


My preferred fruits for flavor are strawberries, mango, mango strawberry, and blueberries.

These are great because you don't have to deal with seeds and these are very sweet fruits.


For one serving

I have a high powered blender with a wand that I can use to mix with, which gives you ice cream in the shortest time. But if your blender can't handle frozen bananas or it's still chunky you can blend up your ingredients unfrozen then freeze it in a Tupperware over night. If you use this method it may turn out more icy but doesn't melt quickly. It tastes the best if you eat it within 24 hr.


A Note on Bananas:

You want yellow brown spotted bananas to avoid a bitter taste.
