This Quinoa Casserole is very moist with a little kick to it.
Its great for a large group of people or brunch
or if your meal prepping breakfast for the rest of the week.
2 cups cooked quinoa(mine was cooked in ½ broth and ½ water)
1 red bell pepper
1 small zucchini
½ tbsp salt
2 tbsp no salt seasoning(costco)
1 tsp basil
½ crushed chili
Yields 12 small muffins and one 8x8 Pyrex pan
Muffins: about 20 min
minced all veggies in a food processor.
Combined eggs veggies and spices until mixed
pour into dish and or muffin pan/silicon cups
