Meatloaf meatballs

I dipped into Arizona for a day and now I should be back in New Mexico

 

Need a meatloaf that cooks in half the time? Or Need appetizer for a party?

Meatloaf Meatballs are perfect for both.

This is a huge amount of food so this would be great as an appetizer for a party.

But if its for 2 people you may want to half it. But if you love leftovers make all of it.

 

Meatballs

  • 2 lb ground beef

  • 1 yam

  • 1 egg

  • ½ tbsp smoked paprika

  • ½ tbsp chili crushed

  • 1 tbsp basil

  • ½ tsp rosemary

  • 2 tbsp garlic

  • ½ cup diced tomatoes

 

Sauce

  • 1 tsp smoked paprika

  • 1 tsp chili

  • ½ tbsp garlic

  • ½ cup diced tomatoes

  • ½ sauce

  • 3 tbsp paste

 

Instructions

Pre heat oven to 375ºF

 

  • Put your yam in the microwave for 6 min to soften(don't forget to poke it)

  • (so that its not crunchy when your meat balls are cooked)

  • Let cool

  • While your waiting for the yam to cool make the sauce

  • In a pot stir all your sauce ingredients till mixed and simmering and let simmer 5 min.

  • Once the yam cools enough to touch dice your yam up (small so that your meat ball don't fall apart)

  • Take your ground beef, dices tomatoes, egg, yam, and spices and mix it up

  • Form your meatballs and place them on a baking sheet

 

Bake for 17-20 min at 375ºF
