Cauliflower Pizza Meal prep style

I know there are a lot of recipes out there for cauliflower pizza. Mine is a little different and for those who don't have a lot of time to spare. I have also included my home made pizza sauce and Sausage.

Of course it's Gluten Free, Dairy Free, Grain Free, and Paleo

 

 

 

Pizza sauce

 

1 can and 4 tbsp tomato paste(6 oz can)

2 Tbsp garlic

2 cups fire roasted crushed tomatoes

1 1/2 Tbsp oregano

¼ tsp of sage

2 pinch of salt

1TBLs of maple syrup

1tsp of olive oil
 

put all ingredients in a pot

Stir till all is mixed

let simmer for at least 10 minutes


Crust

 

1 large head cauliflower

½ onion

1 tbsp oregano

1 tbsp Basil

½ tsp garlic powder

2 pinches o salt

2 eggs

 

With a food processor take your onion and cauliflower blend till the cauliflower is small and like snow

Put in a large microwavable bowl

Cover with seran wrap

Microwave for 10 min with

Let sit for 10 minutes

Take a tea towel and lay it out on

Carefully pour out your cauliflower on top and let cool at least 15 min

Take up all corners of towel in hand and twist down till cauliflower is trapped

Squeeze all liquid out, it takes a while

If you don't get enough liquid out your crust will fall apart

Put cauliflower back into bowl add spices and eggs and mix

spread out crust on oiled baking sheet or pizza pan with spatula or hands

 

Bake for 15 min at 375ºF

 

 

 

Sausage

 

1 lb ground beef

1 tbsp basil

½ tbsp oregano

½ tsp sage

½ tsp chili powder

1 tsp salt

1 tbsp garlic

 

mix all ingredients together

Make small balls or pinch of small sections

Place on pizza or cook in pan before hand

 

P.S. this sausage makes great juices for making gravy

 

Toppings(if you want something else go for it)

 

zucchini

mushrooms

bell pepper

kale(frozen)

 

Thinly slice zucchini, bell pepper and mushrooms

Place all toppings in a pan to pre-cook so that there not crunchy

 

If you are meal prepping

option one

Make your sauce, and pre-cook your toppings

Make crust but don't form or cook it

place in fridge and assemble the day you eat it

option two

Make your sauce, and pre-cook your toppings

Make crust but don't form or cook it

Spread sauce in the bottom of an oiled 13x9 pyrex baking dish

Place your toppings on top of sauce

Place in fridge or put in oven at 375 for 10 min then refrigerate

The day/night you are eating the pizza take every thing out

Pre heat oven

Spread out crust on oiled baking sheet or pizza pan with spatula or hands

Bake375ºF for 10- 15 minutes just depends how think it is.

with spatula scoop out your toppings and place on top of crust

If you want cheese sprinkle on top

Bake375ºF for 10 min

serve
