Spicy Lemon Chicken Casserole

I don't normal make lemon dishes spicy but different is fun. This casserole is Gluten Free and Dairy Free and pretty easy. I made this spicier then I meant to But it works.

Feel free to go easy on the crushed chili if you want.




2 chicken breasts

2 tbsp basil

½ tbsp crushed chili

1 tsp salt

½ tsp rosemary

2 cup quinoa

¼ cup lemon juice

¼ cup chicken broth

2 tbsp garlic




Cube your chicken

In a bowl mix together everything but the potatoes

With a mandolin or food processor thinly slice your potatoes I used Yukon Gold

Pour a little extra broth on top

Sprinkle basil and garlic powder

Drizzle a little olive oil on top

Cover with foil

bake for 1 hr at 350ºF

let set for 15 min
