Blueberry Ice Cream with whipped cream


Dairy free, sugar free, two ingredients goodness.

Banana based ice cream has a nice creamy texture and counts for eating fruit, which is good for you.


Ice Cream

2 pre-frozen bananas

1 cup of blueberries

(you can add some(1 or 2 tbsp) whipped cream into your Ice cream if you want)


Whipped Cream


Fat off the top of a can of coconut milk

1-2 tbsp of maple syrup (to taste)


whisk together


If you put the can in the refrigerator before scooping out the top layer its easier to get all it


For one serving

I have a high powered blender with a wand that I can use to mix with, which gives you ice cream in the shortest time.

But if your blender can't handle frozen bananas or it's still chunky you can blend up your ingredients unfrozen then freeze it in a Tupperware over night. If you use this method it may turn out more icy but doesn't melt quickly. It tastes the best if you eat it within 24 hr.

Put some whipped cream on top and serve 


A Note on Bananas:

You want yellow brown spotted bananas to avoid a bitter taste.
