Honey Ginger Chicken

I am proud of this summer dish. Its easy and refreshing.

It is also gluten free, dairy free, soy free, and paleo.

You can eat it over salad with complementary dressing which is below.

Or you can eat it over rice, potatoes, or any veggie.


1 tbsp ginger

2 tbsp honey

½ tbsp garlic powder

½ tsp salt

½ tsp paprika

1 tbsp lemon juice

1 tbsp olive oil

1 tbsp coconut flour


Mix all ingredients together in a bowl

Cut your chicken into chunks

Place Chicken into bowl

Mix until chicken is coated(it sticks better if you dry off the chicken with a paper towel)

Place coated chicken in a foiled lined dish


Bake for about 30 min at 375ºF



Honey Ginger Salad Dressing


1 tsp ginger


1 tsp garlic

dash of paprika

1 tbsp lemon juice

4 tbsp olive oil

3 tbsp honey (generous)


Whisk all ingredients together

It takes a bit but it will mix

yield 4-5oz
