Eggy Shepard's pie

Quick and easy Shepard pie with a twist.

Not traditional but Gluten free Grain Free and UltraSafe

 

mashed potatoes

1 lb ground beef

1 yam

3 zucchini

2 tbsp no salt

½ tbsp basil

1 tsp oregano

1 tsp salt

6 eggs

 

 

 

Use leftover mashed potatoes or make a new batch

Put ground beef, chopped onion, chopped zucchini and spices in a skillet and cook till

meat is browned but not cooked through

Place yam in microwave for about 6 min to soften (don't forget to poke)

Mix and spread mashed potatoes and meat and veggies

Chop yam and sprinkle on top of mashed potatoes

Crack and pace eggs on top

 

Bake at 400ºF for 25-30 minutes till eggs cooked
