Healthy Comfort Food Casserole

This dish is loaded with veggies ad meat is optional.

It makes my guts very happy to eat this, Enjoy!



Mashed “potatoes” with veggies


1 head of cauliflower

2 small zucchini

1/2 bell pepper

small onion

1 tsp salt

1 tsp paprika

1.5 tsp tbsp basil

2 tbsp garlic

1/2 cup coconut oil 

1/4 cup coconut milk



In a food processor blend down all your vegetables 

Place in microwave safe bowl

Cover in saran wrap

Microwave for 10 minutes

Mix in the rest of the ingredients 

Take a 9x13 baking pan and oil it

Place your Mashed “Potatoes” in the bottom and set aside




1 med zucchini

1/2 bell pepper

1 tbsp generous garlic minced



Slice your veggies 

In a pan with some oil  saute till they are almost cooked through



1/2 lb ground beef

1 egg

1/2 tbsp basil

tsp oregano

1/2 tsp paprika’

1 tbsp garlic

1/2 tsp salt




dashed with basil, salt, paprika


Meat Instructions:


You can do both meat types or just one, up to you


For Meatballs

Mash all ingredients together

Form balls and then place on Mashed “Potatoes”


For chicken 


dash with spices

Place on mashed “potatoes”


Final touches Instructions:


After your meat is place or you can skip the meat

Place your sliced veggie toppers

Place in oven for 375ºF 20minutes
