Meatball Subs

Sandwiches are hard to come by but your can make it work.

The buns are also great for other kinds of sandwiches 



½ onion

1 lb ground beef

2 tbsp almond flour

2 tbsp garlic

2 tbsp oregano

1 ½  tbsp basil

1 tsp salt


Mash all ingredients together  and form meat balls 

place on a baking tray


Bake for 20 min at 375ºF



2  ½ cups pasta sauce (garden vegetable pasta sauce by Muir glen)

1 can tomato paste( 6oz)

1 cup diced tomatoes (canned)

¼ cup broth

2 tbsp garlic

2 tbsp oregano

1 tbsp basil

1 tsp smoked paprika

1 tsp salt

½ tsp rosemary

pinch of thyme


In a Pot

Combine all ingredients and let simmer for 10 minutes


Sub Buns

2 small cauliflower or one very large

1 onion

2 eggs

2 tbsp almond flour

1 tsp paprika

1 tsp basil

1 tbsp oregano

1 tsp garlic powder

½ tsp salt


In a food processor blend your cauliflower and onion down as small as you can

Place cauliflower and onion in a bowl and cover with suran wrap 

Microwave for 10 minutes

let cool

Place onion and cauliflower in a tea towel wrap it up and squeeze all the water out(it takes a while)

Once all the water is out place back in the bowl

Add the remaining ingredients and stir

Prep your baking sheet with foil and oil

Form your buns in to small rectangles 

Pat them dow so there flat and bake 


375ºF for 10 to 15 min (it really depends on size so keep a eye on them)


Put it all Together

If you wish to add some zucchini or mushrooms on top go for it!

Your can place your meatballs directly into the sauce or serve separately

Let each person assemble there own Meatball Sub so that it doesn’t sit and get soggy.
