Veggie Stuffed Chicken

Stuffing

½ zucchini 

3 mushrooms

½ onion

 

2 chicken breasts 

 

Mince your vegetables

Place in a pan and  sauté with oil

Remove stuffing an place in a bowl

Butterfly your chicken breast

Sprinkle/ dash spices on both sides generously or to taste

In same pan cool both sides of your chicken for about 5 minutes 

Just to start the cooking process and add color

Place your Chicken in a 8x8 Pyrex lined with foil 

Open each breast and spoon in your stuffing to desired amount if your have extra place on top of Chicken or around

 

Cook at 375ºF or 20 min
