These Carrot Cake Wraps are extremely sweet, moist and healthy!
Eat as a dessert or a snack. It doesn’t take much to get your sweet fix!
8 oz or about 14 dates
4 medium carrots
1/4 cup unsweetened shredded coconut
1/4 cup nut butter of your choice(Nutzo, almond butter, peanut butter)
If it is too sweet for you and or you want more green add a small blended zucchini
or uses zucchini slices as a chip and scoop
In a food processor blend your carrot and dates(remove seeds first) down
Place carrots and dates in a bowl
With a spoon mix in shredded coconut, nut butter, and cinnamon
Scoop on to leaves and serve
Or just enjoy a spoonful or two
