Spaghetti Squash Fritters

I ate mine with meatballs and sauce from my Meatball Sub Recipe

 

 

4 cups Spaghetti Squash

1 cup quinoa(generous)

4 eggs

1 tsp salt

1 tbsp oregano

1 tbsp basil

½ tbsp garlic powder

 

Bake a Spaghetti Squash in the over

cut in half

open side down in a pan

put a cup of water in the pan

bake at 400ºF till soft

let cool a bit

Scrape out the insides

 

Mix all ingredients together in a bowl

In a skillet place desired size of mixture 

I use a fork to scoop it out

let your fritter get golden on one side before flipping

Repeat till all your mix turn is gone
