Taco Stack and Rolls

 If you don't weigh down your "tortilla" U can roll it up and eat it. But if you over load your taco like I did then its best to eat it stack style. Also if you like to minimize dishes you can cook the sauce with the meat. Hope you enjoy!

“Tortillas”

 

1 head cauliflower

4 carrots

2 baby portabella 3 if there really small

1 onion

 

In a food processor blend all above ingredients down as small as it will go 

place in a bowl

 

Cover with seran wrap

Microwave for 6 minutes 

stir

Microwave for 6 more minutes

Let cool

 

While waiting prepare the filling

 

1 lb Ground beef

1/2 onion

2 tbsp garlic minced

slat

spices

 

 

Drain excess liquid from “tortillas”

Place in a tea towel or non textured dish towel

squeeze it out till all liquid is out

 

Add spices to “tortillas”

1 tsp salt

1/2 tbsp garlic powder

1 tsp smoked paprika

And 2 eggs

Mix it all together

 

Pre heat oven to 350ºF

Take a baking tray line it with foil

oil it

mash out your tortilla till its flat and in a rectangle shape

Bake in oven at 350ºF for 10- 15 minutes 

let cool a bit

sauce

 

2 tbsp tomato paste

2 tbsp taco seasoning

2 tbsp diced tomatoes with green chilis

 

 

simmer for a few minutes 

 

once you “tortillas have cooled a bit cut into strips about x

place sauce on then meat

you can add tomatoes, lettuce, cheese...

Roll and serve
