Pesto Chicken on Zucchini Noodles

Pesto (from dried basil)

 

11.5 tbsp basil

5.5 tbsp almond flour

3/4 cup olive oil

2 tbsp garlic

1/2 tsp Salt

 

Blend in a food Processor

 

Chicken

 

Baked in oven

2 chicken breasts whole or cubed

Spread the pesto all over the chicken

Cover with foil and bake 

For 20 minutes a 375ºF

(cubed may only need 15 minutes )

Because this is dried basil it will look really dark

 

 

In a Skillet on the stove

oil skillet

place chicken in I suggest cubed or strips

cook and stir until cooked through

 

zucchini noodles

 

Turn you zucchini into noodles with a spiralizer

Cook in a large deep skilled with oil 

Salt and pesto is optional

Cook until soft
