Chicken pot pie mashed crust

Need a quick and cozy meal?

Make it even quicker with leftover Mashed Potatoes

 

Mashed Potatoes

 

 

 

2 chicken breasts

2 cups peas 

½ cup carrots

1 cup broccoli

1 cup zucchini 

1 cup cauliflower 

2 cups broth

1 tbsp tomato paste

 

Spices

1 tsp rosemary

½ tsp thyme

1 ½ tbsp oregano

1 tbsp basil

1tbsp no salt seasoning 

1 tsp salt

 

 

Make mashed potatoes or use leftovers

 

Cube chicken

chop Veggies

 

In a deep pan Place all veggies, broth, tomato paste, chicken and spices

cook till veggies are soft and chicken is almost cooked

 

Take a Baking pan 

Smooth out a layer of mashed potatoes in the bottom of the pan 

This should be about 1/2 of your mashed potatoes

Pour your filling on top and spread it out

Smooth out a second layer of mashed potatoes on top

 

Bake at 400ºF for 20 min
