Yams Fall Style

I was shooting for a healthy fall themed meal. I think yams, pumpkin, cinnamon, and nutmeg work quite nicely. If your not into eating your greens don’t put it into the dish. And if you are going for more of a treat add some coconut sugar to it. its up to you hope you enjoy!

 

Ingredients:

 

  • 1 onion

  • 2 yams

  • 2 tbsp garlic

  • 1/2 cup pumpkin puree

  • 1 cup greens (spinach and or kale i used frozen)

  • oil for cooking(coconut or olive oil)

 

Spices

 

  • 1 tbsp cinnamon

  • 1 tsp nutmeg

  • 1 tsp salt

 

optional:

 

coconut sugar for a sweeter version 

a few tablespoons till sweet enough for you

I suggest 2-4 tbsp

 

Directions:

 

  • Chop your onion

  • Cube your yam

  • Place both in a large deep with oil 

  • Cook until yams are soft

  • Add in pumpkin, and spices

  • Stir till yams are coated evenly with spices

  • Add in your greens 

  • Once your green are cooked serve
