Crockpot: Meatballs in a Spicy Green Chilies Sauce

Busy times call for crockpot dishes. But I didn't want to eat the typical crockpot dishes.

If you want a little spicy and a dish thats enchilada inspired, here you go!

 

 

 

Sauce:

 

  • 2 cauliflower heads

  • 1 green bell pepper

  • 1 onion

  • 3 tbsp coconut oil

  • 2 cans (14.5 oz) fire roasted with green chili

  • 1 can water

  • 2 garlic

  • 1 tbsp oregano

  • 1 tsp salt

  • 1 tbsp Mexican chili powder

  • 1/ tbsp paprika 

  • 1/2 tbsp crushed red pepper 

 

Meatballs:

  • 1 lb ground beef

  • 2 eggs

  • 2 tbsp almond meal

  • paprika 

  • 2 garlic 

  • 1 tsp cumin

  • 2 tbsp oregano

  • 1 tsp salt

  • 1.5 tbsp Mexican chili powder

  • 1/ tbsp paprika

 

Instructions:

  • Chop up cauliflower into big chunks

  • Dice green bell pepper and onion 

  • Mince garlic(all 4 tbsp)

  • Place all sauce ingredients in crock pot

  • Stir till mixed

  • Make meatballs

  • Mash all ingredients in a bowl

  • Form large Meatballs

  • Place on top of sauce in the crockpot

  • Place lid on

  • Cook on low for 6-7 hrs
