Version 2: Peanut Butter Pumpkin Bread

Its pumpkin season but why not throw some other yummy things into the Bread. This is Version 2 you can find version 1 here.

I switched some fours around and cooking time. This bread is very moist and gooey in a good way. Hope you enjoy!

 

Ingredients:

 

  • 3/4 cup pumpkin puree

  • 3 eggs

  • 1/4 cup coconut milk

  • 1/4 cup and 1 tbsp  peanut butter

  • 2 bananas 

  • 3/4 cup coconut sugar

  • 1/4 cup cassava Flour

  • 1 almond flour

  • 1 tsp salt

  • 1/2 tsp baking powder

  • 1/2 tbsp pumpkin spice

  • 1/2 tbsp cinnamon

  • 1 tsp nutmeg

Optional:

Chocolate chips(1/2 cup)

If you want dairy free, I suggest Enjoy Life chocolate chips

 

Pre heat 350ºF

 

Instructions:

 

  • Combine pumpkin puree, bananas, and coconut milk

  • Mash the bananas with a fork or whisk 

  • Whisk together

  • Add in the rest of the ingredients

  • (optional step)If you are adding chocolate chips, either mix 1/2 cup into the bread and or sprinkle some on top

  • Oil a bread pan

  • Scoop batter into bread pan and bake 

 

350ºF 55-65min
