getting a craving for stuffing again its past thanksgiving but you don't need a turkey for this...
Thanksgiving can be daunting for anyone.
But when you add in food restrictions, allergies and intolerances it can make you not want to even try. Thanks giving for us this year is just the two of us, nice and simple.
This recipe is a easy way to get that stuffing taste with out a turkey and all the hours.
1 lb chicken
4 green onion
1/2 yellow onion
1 can coconut milk
1/2 cup coconut oil
1/4 cup shredded coconut (optional)
1/2 toasted coconut flakes(optional)
1/2 cup potato starch
1/4 cup potato flour
1 tsp salt
2 tbsp minced garlic
1 tbsp basil
Chop onions and zucchini and cube onion, cube chicken
Cook yellow onion and zucchini in a pan on stove top feel free to add more zucchini
Stir the rest of ingredients except chicken
Add chicken into the thick mixture and fold in
Spread in a 9x8’ oiled pan
Sprinkle onion and zucchini on top
Bake at 400º for 25 minutes
