Repost Happy Thanks Giving!
In case you missed it I'm traveling and have no internet, so here come the reposts.
Since Thanks giving is just the two of us we are opting for chicken.
When I say chicken I mean quick and easy no stress Thanks giving dinner.
If you really don’t like onions you don’t have to use them just cover your chicken with a little oil and spices.
2 chicken breasts
1 large jeweled yam
2 cup Kale
With a mandolin or knife thinly slice your yam and zucchini
Oil a 9x13 baking pan
Layer your yam across the pan
Place chicken breasts on top of yams
In a bowl whisk eggs
Add in onions and spices and stir
Pour on top of chicken
With a brush oil the yam that is visible
Place the chopped kale in a bowl
Sprinkle about 2 tbsp of oil on top and massage the oil into the kale with your hands (you don't have to be gentle it won't bruise)
Place Kale around chicken
Bake at 375º F for 22 minutes
