Pumpkin Baked Apples

I will be traveling and much of the time I will not have internet. Recipes and videos will be slow to come out for the next 3 or so weeks. But I have scheduled some old but yummy recipes for you.

Enjoy!

 

I used a particular kind for apple because thats what I had and I didn’t want to use granny smiths. You can use your preference of apple you don’t have to use what I used.

 

 

Ultra safe

 

Ingredients:

  • 3 apples (gala)

  • 1/3 cup pumpkin

  • 2/3 toasted coconut

  • 1/4 cup almond four

  • 1/2 tsp salt

Optional:

  • 1/4 cup Enjoy life dairy free chocolate chips

 

Preheat to 400º F

 

 

 

 

 

Directions:

  • I chose to chop the apples up and not stuff them like I did the “For Him” Kind below but if you want to stuff yours it will still work.

  • Take a pyrex pan and line with foil and oil the foil

  • Chop (or cut out) your apple in to slices

  • Place apples in foil lined pan

  • In a small bowl mix the rest of the ingredients together

  • You can if you chose put chocolate chips in the bowl or wait and sprinkle them on top

  • Spread the mix on top of your apples

  • Cover with foil

Bake at 400º F for 20 minutes or until apples are soft

 

 

For Him

 

Ingredients:

 

  • 4 apples(fugi)

  • 2/3 to 1cup quick oats(depends how thick you like it)

  • 2 tbsp oil or butter

  • 1/4 cup honey (or maple syrup)

  • 1/4 cup pumpkin

  • 1/2 tsp salt

 

Optional:

  • Up to 1/4 cup chocolate chips(dairy or non dairy)

 

Preheat to 400º F

 

Directions:

  • I chose to Stuff the apples and not chop them like I did the “Ultra Safe” Kind above but if you want to chop yours it will still work.

  • Take a pyrex pan and line with foil and oil the foil

  • Cut out the center of your apples with a knife. work you way around without cutting through the bottom. The hole shout be about a 1.5 inches to 2.5 inches across.

  • Place apples in foil lined pan

  • In a small bowl mix the filling, the rest of the ingredients together

  • You can if you chose put chocolate chips in the bowl or wait and sprinkle them on top

  • Pour mix in your apples

  • If you don’t want to wast the part of your apple you cut out place it around the whole apples and pour the remainder of your filling on top

  • Cover with foil 

 

Bake at 400º F for 20 minutes or until apples are soft
