It was just the two of us for thanksgiving and there was no reason to buy a turkey.
So we kept it simple. It turned out very moist and flavorful.
But today I am on winter break which means more time to travel, cook and hopefully post recipes.
But today I’m resting.
14 small red potatoes
1/4 - 1/2 cup broth
3 tbsp olive oil
1 tbsp oregano
1/2 tbsp thyme
1 tsp rosemary
1 tsp sage
1 tsp salt
2 tbsp garlic
Chop carrots, and onions
Chop potatoes and mushrooms into quarters
Place all veggies in dutch oven and mix
Make a well in the center for the chicken to sit in
you can stuff some veggies inside the chicken if you need more space
Pour liquids over veggies
Cover chicken with spices, (I put approximate amounts but when I apply the spices i sprinkle it on till chicken in covered)
Place chicken on top of veggies
pour a little oil on top of chicken
Place lid on
Place in oven
Bake at 350ºF for 1.5 hr
