Dutch Oven Chicken (What We Ate At Thanksgiving)

It was just the two of us for thanksgiving and there was no reason to buy a turkey.

So we kept it simple. It turned out very moist and flavorful.

But today I am on winter break which means more time to travel, cook and hopefully post recipes.

But today I’m resting. 

 

Ingredients:

 

Veggies:

  • 5 carrots

  •  3 onions

  • 14 small red potatoes

  • 8(oz)mushrooms

 

Liquid:

  • 1/4 - 1/2 cup broth

  • 3 tbsp olive oil

 

Meat:

  • Whole chicken(mine was 5 lb)

 

Spices:

 

  • 1 tbsp oregano

  • 1/2 tbsp thyme

  • 1 tsp rosemary

  • 1 tsp sage

  • 1 tsp salt

  •  2 tbsp garlic

 

Directions:

 

  • Chop carrots, and onions

  • Chop potatoes and mushrooms into quarters 

  • Place all veggies in dutch oven and mix

  • Make a well in the center for the chicken to sit in

  • you can stuff some veggies inside the chicken if you need more space

  • Pour liquids over veggies

  • Cover chicken with spices, (I put approximate amounts but when I apply the spices i sprinkle it on till chicken in covered)

  • Place chicken on top of veggies

  • pour a little oil on top of chicken

  • Place lid on 

  • Place in oven

 

Bake at 350ºF for 1.5 hr
