Non Traditional Curry (for our move)

We are moving 30 miles down the road, closer to my work by the way. 

Not that far but moving is always crazy and messy. Cooking is a pain and having food around moving time is hard. You don’t really want a full kitchen especially fridge because you don’t want to have to move food or end up with spoiled food. I remember when my family moved when I was 11 years old (and not diagnosed with celiac yet) we ate taco bell for dinner after our move. I defiantly don’t eat fast food now and its not a option so this is what I made for the days around our move. 

Favorable, freezable, and not too much work.

Ingredients:

 

Sauce:

  • 3 cans coconut milk full fat

  • 1 cans worth of chicken broth

  • 1 can fire roasted tomatoes (crushed or chunked)

  • 2 tbsp garlic

  • 1 tsp salt

 

Spices:

  • 2 tsp basil

  • 2 tbsp oregano

  • 1 tsp salt

  • 1/4 tsp chili pepper

  • 2 tsp red curry past 

  • 2 tsp green curry past

 

Meat:

  • 1 or 2 chicken breasts 

 

meat balls:

  • 1 lb ground beef 

  • 1 tbsp garlic

  • 1 tsp salt

  • 2 tsp red curry past 

  • 1 tsp green curry past

 

 

Veggies:

  • 2 zucchini

  • 1 onion

 

Directions:

  • Dice onion

  • Slice zucchini

  • Mince garlic

  • In a large deep pan/skillet  caramelize onion and garlic

  • Pour in coconut milk, broth, and tomatoes

  • Add spices

  • Bring to a simmer

  • Add in chicken breast(s) and zucchini

  • In a small bowl place all meat ball ingredients

  • Mash and form small meat balls

  • Place meat balls in sauce

  • let simmer till meat balls are cooked

  • Stir occasionally 

serve as is or over potatoes, rice, quinoa...
