Lentils: Herby with a Bit of Tomato For Him

What do you do when someone is really hungry and just rice isn’t enough?


I’m not eating these there too much for my guts. But my husband likes them, so I though I would share.




2 cups lentils

3 cup water or broth

1/3 cup fire roasted tomatoes(canned: crushed or diced)

1/4 of a onion

2 tbsp minced garlic

2 tbsp olive oil

1 tsp salt

3 tbsp oregano

1 tsp basil

1 tsp taco seasoning or chili powder

1 large bay leaf

dash of thyme



3 tbsp tomato paste for a more tomato based version




In large sauce pan or pot(may take longer in a pot)

Place lentails, onion and broth and bring to a boil 

Turn down to a simmer

Add remaning ingredients

Simmer till lentals are soft

If you have too much liquid pour it off


Should cook in 20 to 30 min
