Curry Chicken in a Dutch Oven

Having time to cook just isn’t happening so I am still in casserole and dutch oven mode.

Still tasty but I still don’t have time or light to give you nice quality pictures. So sad but life happens.





  • 1 whole chicken

  • about 2 lb of carrots

  • 1 head cauliflower

  • 2 zucchini

  • 1 onion

  • 2 cans coconut milk

  • 3 tbsp garlic

  • 1 tsp salt

  • 2 tbsp curry

  • smoked paprika




  • Chop carrots, zucchini, onions

  • Take your dutch oven and place carrots, cauliflower, zucchini and onions in the bottom

  • Pour spices on top of veggies salt, curry powder, and garlic

  • Pour in coconut milk



  • Place chicken in

  • Dash chicken with more spices 

Bake at 350ºF for 1.5 hours
