Sick Tacos

While sick is slang I really chose that word because I am sick and can’t think of clever names right now. I employed my husband to do the slicing and chopping and I spiced and finished. It was a team effort, maybe one day he will be more comfortable coming up with dinners on his own.







1 butternut squash

2 cauliflower

1 onion











1 onion

8 oz mushrooms

2 lb ground beef

1 can tomato paste (about 6oz)

3 tbsp minced garlic

2 tsp salt

2 tbsp paprika

1 tsp cumin

1/4 tsp ground cayenne 

1 tsp basil

1/2 tbsp coriander

1/2 tbsp turmeric





Pre heat 400ºF

Take a large baking sheet and line with foil

Take your 2 cauliflowers and take to stock and leafs off

Slice from top to bottom about 1/4” thick all the way across

Spread out on Baking sheet covering the whole thing

Dash spices paprika cumin and salt 

Drizzle some olive oil in top

Peal your butternut squash 

Slice it into thin disks(the thinner it is the quicker it cooks)

Place in to of cauliflower the less you layer the squash better try to keep it spread out

Dash spices on spices, paprika, cumin, cayenne, and salt 

Drizzle olive oil on top

Cover squash and cauliflower with foil

Bake at 400ºF for 30 or 45min

depending how thick you cut them and how soft you like them




Dice onion

slice or dice mushrooms

In a large deep skillet Place onions and oil and cook till translucent

Add in mushrooms and garlic

Place in ground beef in and break it apart

Once meat has started to brown add in tomato paste and stir

Add Salt and spices and stir occasionally till cooked through




Use Veggies as a base or as a taco

place meat on top 

Serve and enjoy
