Parsley Meatballs

We had a bunch of parsley leftover after a seder dinner and I didn’t want o wast it.


So what do you do with ingredients you don’t know what to do with? Make meatballs!




large hand full of fresh parsley 

1/4 cup lemon juice

1/4 olive oil

2 tbsp garlic


1 tsp Salt 

2 tsp rosemary

1/4 thyme

2 lb ground beef




line a large baking tray with foil

pre heat oven

In a food processor blend parsley, lemon, olive oil, and garlic

Place in a bowl

Add in slat and herds and meat

Mash it all together

Form meatballs by rolling meat in hands

Place on large baking tray

place in oven


Bake at 375ºF for 20 minutes
