Another quick and easy recipe for you. I seem to be able to have Ancient Harvest Quinoa Corn Pasta every once and a while, so I did actually eat this. Processed food is more likely than not, not my friend. This recipe is a way to add flavor to pasta without the pasta sauce. For those of you who can’t do tomatoes or just need something different.
A friend let me try some fake cheese and it didn’t kill me! I have tried some other brands a long time ago and it was not fun. the brand is Follow You Heart check it out. I only eat a little at a time because it is processed and I don’t want to over load my system. But it was so nice to have something different. The Cheese is vegan, lactose, casein, soy and dairy free. Follow Your Heart makes Provolone, garden herd, mozzarella and American cheese. I have tried the provolone and mozzarella. My local
CO OP upon request of my friend carries the provolone and I ordered the mozzarella through Azure.
The cheese does melt I just didn't for the picture.
I am on summer break and its great. There are huge advantages to working with kids and being on the school system schedule. Only disadvantage is the money, but thats what being frugal is for. I have crammed so much in this week, having fun, that I had to take an easy day today. I’ve put off so many things I enjoy for that I can work full time and take classes that I haven't actually slowed down yet. My body needs a break. I have a problem with being lazy, I’m just not good at it!
Ok back to the food...
1 lb ground beef
2 cups or 10oz of cubed butternut squash(pre-cooked)
2 cups or 10oz of frozen greens(kale or spinach or chard or a blend)
3 tbsp garlic
1/3 cup coconut aminos
1/2 tsp salt
2 tbsp Mexican chili powder
2 tbsp smoked paprika
1 tsp oregano
1 tsp cumin
The pasta I used was gluten free: Ancient Harvest quinoa and corn pasta
You can use what ever pasta type and kind you like
I’m going to let you follow the directions on the package. But on a side not I cook the Quinoa corn pasta a few minutes longer then they say, so that its not chewy.
If you don’t have a bag of frozen butternut squash or didn’t pre cook it nows the time to cook some
Start heating up you water for the pasta so you eat at a decent time.
Dice your onion and mince garlic
Place onions in a large skillet with some oil
Cook until translucent
Add in butternut squash(pre cooked and or frozen)
Add in minced garlic
add in meat and break it up
Add in spices, salt, and coconut animos
Stir till the meat is cooked through.
Add on your fake cheese of choice or Follow Your Heart cheese like I talked about above. (It does melt)
Serve on pasta or in tacos
