Curry Infused Meatballs

Switching the flavor a little with out making a sauce.

 Pretty simple and pretty easy. 

Packing in the veggies!




  • 1 onion

  • 1 head of cauliflower

  • 3 tbsp garlic

  • 1 cup frozen kale(or fresh just takes longer)

  • 1 tsp salt



  • 1/2 cup of above veggies

  • 1 lb ground beef

  • 1 tsp salt

  • 1 tbsp curry

  • 1 tsp oregano

  • 1/2 tsp turmeric

  • pinch of thyme



  • Dice onions

  • Chop cauliflower

  • mince garlic

  • In a large skillet place onions with oil and cook till translucent

  • Add in cauliflower and a 1/2 cup of water

  • Place lid on to let steam and stir occasionally till cauliflower is soft

  • Add in kale and garlic

  • Once your veggies are soft and cooked remove veggie and place in a bowl 

  • In a separate bowl place all of your meatball ingredients and mash it together

  • Form or roll meat balls and place into the skillet

  • Cook on all sides till cook through

  • Add veggies back in to skillet, stir and serve

  • Or if you are fancy place in to a serving bowl


If you would rather bake your meatballs, you can!

I personally avoid turning on the oven in the summer 

but 20 min at 375ºF will do it.
