Saucy Casserole

Quick and easy way to cook-up some ground beef and veggies.

I have cooked many variations of this during busy times or when I don’t know what to cook.

 

 

Ingredients:

  • 1 lb ground beef

  • 1 cup quinoa

  • 2 eggs

  • 1 can pizza sauce(15 oz)

  • 10 oz frozen kale

  • 10 oz of broccoli and or cauliflower and carrots(mixed bag works best)

  • 1 tsp salt

  • 1 tsp paprika

  • 1 tsp basil

  • 2 tsp oregano

  • 3 tbsp minced garlic

 

Directions:

 

  • Pre heat oven 375ºF

  • Mince garlic

  • You may want to let your frozen veggies thaw a little so you don’t freeze you hands latter

  • In a 9x13 pyrex or baking pan place veggies and break them apart

  • Crack in your eggs

  • Scoop in your Quinoa

  • Pour in pizza sauce

  • Add in salt, spices, and garlic

  • Mix all ingredients well

  • Add in ground beef

  • Mash ground beef with hands until mixed in

  • Smooth out top so that its level

  • Bake at 375ºF for 30-45 min(should only take 30 but every oven is different)
