King Soba Noodle with Lamb Topper

This quick dinner feels fancy to me. I have had king Soba buckwheat and yam noodles a few times. For some reason buckwheat is a grain I can handle. I don’t eat it all the time but these noodles let me mix up my diet and meals a little bit.  If you eat them by themselves they are not that flavorful. But adding some flavoring to the water you cook them in and or eating them with a sauce really helps. 


I got some ground lamb for a good price, so there may be more ground lamb experiments on the blog soon. Lamb is very flavorful on it’s own so I kept the spices simple this time. 


Feel free to leave out or add in to this recipe. You don’t have to use the same noodles as I did. I ordered them through Vitacost and have never seen them at any of my local stores. Pasta, rice, or quinoa will work too for his recipe. 










1 lb ground lamb

1 tsp sage

1 tsp paprika

1 tsp salt

3 cloves garlic

1/2 onion




  • king Soba buckwheat and yam noodles

  • or pasta of choice 

  • 1 tbsp oil

  • 2 garlic cloves

  • 1tsp salt salt



  • In a pot boil water for noodles

  • Once water is boiling add in desired amount of noodles 

  • To make the noodles more flavorful add in oil, garlic, and salt



  • Dice onion

  • cook onion till translucent in a skillet 

  • Massage kale with a tbsp of olive oil

  • Add kale to skillet 

  • Cook till kale is soft




  • mince garlic

  • In a skillet Caramelize onions

  • Add lamb and garlic

  • Break apart lamb

  • Add spices 

  • Cook and stir till meat is cooked through



  • On a plate place a layer of kale 

  • Then a layer of noodles

  • Place meat on top

  • And sever 

  • If you want a sauce on your noodles I suggest Coconut aminos
