Dairy Free Peanut Butter Cups

January 9, 2018

We had family over and I wanted to have a special treat out that they could snack on. I also wanted to have an Ice cream topper. Obviously by the title I picked Peanut Butter Cups!

It was simple and much cheeper than store bought. You can also make them any size you want!

Everyone liked them and I plan on making them frequently.

  • 1 bag Enjoy Life Chocolate Chips

  • 10 tbsp Natural Peanut Butter salted

  • 1 tsp Optional coconut oil

  • Microwavable bowl or double broiler

  • Spoon

  • Measuring spoons

  • Silicone muffin cups

(room in your freezer)

Makes 10 to 12

  • You can either melt your chocolate chips in a double broiler or in the microwave.

  • I did microwave, just heat up in small increments of time(2 minutes straight is too long)

  • Place chocolate chips in bowl and melt

  • Make sure chocolate is melted and stirred

  • Take a spoon and cover the bottom of each silicone cup making sure to get it up on the sides(you should only use 1/2 of the chocolate)

  • Place the cups in the freezer for 5 to 10 minutes (just make sure the chocolate is hard)

  • Optional: put coconut oil in the peanut butter (more so if you use natural PB) It will keep the peanut butter in a stiffer state

  • Place 1/2 tbsp to 1 tbsp of peanut butter depending your preference on PB chocolate ratio

  • Try and get the peanut butter to spread out and lay flat

  • Put back in the freezer for 5 min

  • Your chocolate should still be soft

  • With your spoon spread the rest of the chocolate on top of the peanut butter

  • Place in the freezer for a hour

  • You can keep in the fridge to keep the peanut butter stiffer if you want but you don’t have to.
