Banana Bread

What to do when your bananas turn Black? Banana bread!

That’s unoriginal, but true. I have made banana bread in the past but it was more of a dessert.

I can’t handle too many sweets, cause sugar means inflammation and messed up guts. That said, if you are looking for something really sweet this is not the recipe for you. But if you want a bread that is little sweet and that you can spread coconut oil, butter, or honey on; then this is the bread for you. 

 

Ingredients:

  • 5 blackened bananas

  • 6 eggs

  • 3/4 cup coconut flour

  • 1/4 cup coconut oil

  • 1/4 cup coconut flakes

     

  • 1/4 cup peanut butter

  • 1/4 cup maple syrup

  • 1 tbsp cinnamon

  • 1tsp vanilla

  • 1 tsp baking soda

 

Pre heat oven to 350ºF

 

Directions:

  • Peel the bananas and place them in in a large bowl

  • Mash the bananas with a fork

  • Beat in eggs

  • Stir in the remaining ingredients 

  • The batter should be thick

  • Oil a bread loaf plan

  • put batter in to the plan

  • Smooth it out so its even on top

  • place in oven

 

 Bake at 350ºF  on the bottom rack 

For 45 to 60 minutes (I put a large range because bananas are not all the same size)

 

If it is done then a toothpick will come out clear when you poke the loaf

If the top is getting too dark then cover the loaf with foil.
