Snicker Doodles

One of my favorite kinds of cookies are snicker doodles. But I wanted to make these so that they were not overly sweet. When they first come out of the oven they are supper fluffy but once they are cool they are a little denser. For me I like both fluffy and dense but I like I enjoyed the cookies more when they are denser. 



  • 3 Cups almond flour

  • 2 tbsp coconut flour



  • 1 tsp baking soda

  • salt

  • 3 eggs

  • 1/4 cup maple syrup

  • 1 tsp vanilla

  • 1/4 cup coconut oil 

  • 1 tsp tahini 

  • 1 tbsp cinnamon(Generous)



  • Sprinkle coconut sugar and cinnamon on top

mix a tbsp of each together



Pre heat oven to 375ºF


  • Mix the almond flour, coconut flour, and baking soda(I find the saltiness of the baking soda to be enough but if you want to add 1/4 tsp of salt it will work)

  • With a fork whisk in the eggs, then, maple syrup, then vanilla

  • Mix in warm melted coconut oil and tahini (I make sure it’s warm so that the cold eggs don’t make it hard and hard to mix)

  • Add in cinnamon

  • Oil a baking sheet

  • scoop out dough on to pan this makes 20 to 24 cookies depending on size

  • pat down the cookies so that they are a little flat on top(they will spread a little while they cook)

  • sprinkle the sugar cinnamon mix on top if you want

  • place in oven, set timer for 15 min
