Frittata: zesty Style

 Great for breakfast or on the go. My husband and I have been taking these in our lunches lately. I have a few more versions to share with you soon. Hope you enjoy!

 

Ingredients: 

 

  • 12 eggs

  • 1/2 onion

  • 3 tbsp garlic

  • 1/2 tsp smoked paprika

  • 1/8 tsp cumin

  • 1 cup quinoa(optional)

  • 1/4 tsp salt

  • 2 cups kale

  • 10oz frozen veggies

     

     

  • Desired amount of sausage (I used 1/2 cup)

  • Cheese (fake or real)

  • sausage:

  • 1 lb ground beef

     

     

  • 1 tbsp smoked paprika

  • 1 tsp salt

  • 1/2 pepper

 

Directions:

  • Pre heat oven to 400ºF

  • Prep the sausage

  • In a cast iron skillet cook ground beef with spices

  • Set aside in a bowl

  • Whisk 12 eggs in a large bowl

  • add smoked paprika, cumin, and salt

  • set aside

  • Dice onions and mince garlic

  • Cook onions till they are translucent with the stove on medium

  • Add in garlic, Kale and frozen veggies(you can do fresh)

  • Put a lid on occasionally stir till veggies are al dente

  • Stir in quinoa

  • Sprinkle on the sausage(stove on low)

     

     

  • Place the cheese on switch stove to broil on high

  • poor on the eggs

  • Place in oven on lower shelf

  • cook for 6-10 min, till eggs are no longer giggly when you shake pan
