This is one of my staples for when I need to fight gut inflammation, but don’t want to eat bland food.
But, who wants to eat bland food ever. It is a quick meal and easy. I use pre cooked chicken to make it faster but you don’t have to. I rotisserie a chicken in my toaster oven and it doesn’t heat up the house like a regular oven.
This dish is very savory and I have yet to get sick of it. This dish will serve about two. but feel free to double or cut in half to meet your needs.
1/2 can coconut milk
1/2 tbsp Tahini
3 tbsp coconut oil
3 tbsp coconut aminos
4 handfuls of spinach
3 small yams
chicken breast cubed(for fast results used pre cooked)
In a skillet add coconut oil and onions, cook till translucent
Add in yams and coconut milk, stir so that yams are coated
place lid on to help soften yams for 3 to 5 minutes
stir so that nothing burns
once yams are soft add in spinach and coconut aminos, place on lid to let steam for 2 minutes
Add in chicken
Stir till everything is cooked and hot
