Need a different kind of breakfast? or at least different presentation?

I did a little experiment and ta-da! new breakfast. They turned out a little thicker than I planed because my oven

is not level, but still tastes great! I have tried a few different stuffing ingredients but there are so many more.

Have fun experimenting. 

Ps. The first pictures I took of the steps have poor lighting but I thought you would want to see them anyway. 

 

 

Ingredients:

  • 6 eggs

  • 6 tbsp coconut fat/cream

  • 1tsp baking soda

 

Stuffing options:

 

Directions:

  • Pre Heat oven to 325ºF

  • In a bowl whisk eggs

  • Whisk in coconut fat and Baking soda (the fat on top of can of full fat coconut milk)

  • Oil a baking pan 12 x 16 in or a few smaller pans

  • Pour the mixture into the pan it should just cover the bottom you want it to be thin

  • Bake up to 20 minutes 

  • You have to keep your eye on this one eggs should

    be fluffy and not browning

  • Take out and let cool for 5 minutes

  • With the edge of the spatula or knife slice eggs into rows 4 to 6in wide

     

  • take a spatula an run it under the eggs to lift out 

  • Once the egg sheet is out roll it by hand so that it takes shape 

  • Stuff Rolls with desired stuffing
