4th of July BBQ Round up

In case you didn't catch my news letter here are some great BBQ recipes all in one place. If you want to go back in time even further there are some more recipes like Kabobs, Smoothies, Ice cream, and Fire Cracker Fruit

 

Cast Iron Style BBQ Chicken

 

This was one of those recipes where I threw it together and hoped it didn’t taste like tomato paste. Getting BBQ sauce right with out burning it is hard for me. Guess thats why most people buy store bought stuff. It turned out way better than I expected and my husband really enjoyed it too. 

 

 

Ingredients:

  • 1/2 onion

  • 2 cans or 12oz tomato paste

  • 1/2 can about 7 oz diced tomatoes

  • 1 tbsp apple cider vinegar

  • 2 tbsp coconut aminos

  • 2 tbsp smoked paprika

  • 1 tbsp turmeric

  • 1/8 tsp chili pepper powder

  • 1/2 tsp salt

  • 6-12 Chicken thighs (depends on how many you can cram into the pan)

 

Directions:

  • Dice onion

  • In a large castiron skillet at least 12 inches

  • cook onions till translucent in oil (I used olive oil)

  • Turn off stove and add tomato paste, diced tomatoes, Vinegar, aminos

  • Turn stove back on to low and stir it all together ass in paprika, numeric, chili pepper, and salt

  • Stir till spices are mixed in then place a lid on(mines from an old pot it does not seal)

  • Pre heat oven to 375º F

  • stir occasionally to keep from burring for 5 min 

  • Add in chicken you will have to press/ squish down the chicken through the sauce to the bottom of the pan

  • It will be a tight to get all the thighs in 

  • with a spoon scoop and spread some sauce on top of the chicken

  • Place in the oven

 

Cook at 375º For 30 min

 

Ultra Thick Fav BBQ Sauce

I originally make this BBQ sauce thought the Cast-iron BBQ Chicken Style Recipe.

I have made it so that You can make it in the stove or in a crockpot. 

 

 

 

Makes about 38oz

 

Ingredients:

  • 1 onion

  • 4 cans or 24oz tomato paste

  • 1/can about 14 oz diced tomatoes

  • 6 tbsp oil(coconut or olive)

  • 4 tbsp apple cider vinegar

  • 5 tbsp coconut aminos

  • 4 tbsp smoked paprika

  • 2 tbsp turmeric

  • 1/4 tsp chili pepper powder

  • 1 tsp salt

 

 

Directions:

  • Dice onion

  • In a large cast-iron skillet at least 12 inches

  • cook onions till translucent in oil (I used olive oil)

  • Turn off stove and add tomato paste, diced tomatoes, and oil

  • Turn stove back on to low and stir it all together add in paprika, tumeric, chili pepper, and salt

  • Stir till spices are mixed in then place a lid on(mines from an old pot it does not seal)

  • Stir occasionally to keep from burring the longer you cook it the better it tastes.

  • You can cook it for 15 minutes to an hour and a half on the stove

  • In the crockpot cook on low for 2 to 3 hours I was scared it would burn on the bottom so I did stir it a few times. 

Steak Rub

 

 BBQ sauce is great, But sometimes steaks are more enjoyable without the sauce. 

I am not going to tell you how to BBQ. I usually let my husband handle that department while i’m inside fixing the rest of the meal. 

But I recommend putting the rub on the night before or 30 minutes before you put it on the grill. 

 

 

 

Ingredients:

  • 1 tbsp paprika

  • 1/2 tbsp rosemary

  • 1 tsp salt

  • 1/2 tsp pepper 

  • 1/4 tsp ginger

  • 1/4 tsp turmeric

 

 

 

 

 

 

 

 

 

"Polish" Dogs

 

Rich in flavor and fancy hot dog or Polish dog on a Yam bun

I don't buy processed meat, I don't have a good selection of organic meats were I live and I don't eat pork so

here is what I came up with.

 

Yam Buns

 

1 large Yam or more if you want

 

Sausage

  • 1 lb ground beef

  • 1 tbsp basil

  • ½ tbsp oregano

  • ½ tsp sage

  • ½ tsp chili powder

  • 1 tsp salt

  • 2 tbsp garlic

  • 1 egg

  • 1/3 cup kale(frozen)

 

Gravy

  • 2 tbsp coconut flour

  • 2 cassava Flour

  • non dairy milk

  • garlic powder

  • salt

 

Yam Buns

  • microwave the yam for 5 or 6 minutes to soften

  • let cool

  • Cut yam into thick slices about ½ inch

  • Put yam slices in a panini grill/George foreman or you can fry in a skillet, till toasted

Sausage

  • In a bowl mash together you sausage ingredients

  • Form your sausage by rolling it in your hand to desired thickness and length

  • Place sausages with oil in a skillet

  • Frequently roll sausage so all sides get cooked and not burned

  • Once the sausage is cooed through remove

Gravy

 

Use the same skillet with the juices and add in the gravy ingredients

The more milk you add the thinner it will be

 

Assemble and serve
