We have been eating a lot of ground beef and chicken because it’s cheep. Fish needed to be thrown into the rotation. I found some Frozen salmon which I will share with you next week, but today its canned. I like the brand Wild Planet. For this recipe I used their wild pink salmon. you can double or triple this recipe for more servings.
Makes about 6 fritters
In a bowl combined all ingredients with a fork
You can pick to do mustard or chipotle lime mayo or you can do 1/2 tbsp of each
Turn on the burner under your skillet and get it hot, for my stove its medium
Use a lot of oil and cover the bottom of the skillet.
With your fork place about a tablespoon of the salmon mix in the skillet
Flatten out the salmon mix so that its about a 1/4 inch thin
repeat till skillet if full but non are touching.
let cook till the you see some browning on the under
Flip with a spatula it should be firm and hold together
The second side will cook faster than the first
Remove and enjoy by itself or like a burger or in a salad
