MeatBalled Curried Lentil Soup

October 5, 2018

This soup is full of flavor and tastes great. But you have to have time to pay attention to it. Warning If you cook the meatballs to long you will have no Idea how yummy it is. But it is worth the attention. I have made this recipe several times and I don’t repeat recipes very often.

  • 1 Box Curried Red Lentil soup

  • 1 can coconut milk(full fat)

  • 4 cups bone broth

  • 1cup butternut squash(frozen)

  • 1 onion

  • 1/4 tsp ginger

  • 1tsp salt

  • 1tsp pepper

  • 1tbsp paprika

  • 1tbsp oregano

  • 2 tbsp curry

  • 2 lb ground beef

  • 1 lb ground turkey

  • 1 egg

  • 1 tsp salt

  • 1 tsp paprika

  • 1/4 tsp chili pepper

  • 1 tsp oregano

  • 2 tbsp curry

  • dash of ginger

  • Dice onion

  • If you are not using frozen butternut squash cubbies prep it now

  • In a large deep skillet

  • Place some oil(I use olive) and cook onions till translucent

  • add in Curried lentil soup, coconut milk and bone broth

  • Stir till well mixed

  • Bring to a simmer

  • Add in spices

  • Let simmer wile you prep meatballs

  • In a large bowl combine and mash all ingredients

  • form in to meatballs

  • turn the stove down to low

  • Place all meatballs in(you may have to use a spoon to make room for all)

  • Bring the heat back up till its simmering cover with lid and stir occasionally for no longer than 10 minutes

  • You need to cook the meatballs through just beardy if you over cook then the texture and flavor is not right.

  • Remove from heat

  • I cooked my veggies in a separate pot so that I didn't have anything over flow
