Healing Veggie Soup

My guts do the best on meat and veggies but sometimes I get tired of cooking veggies all the time or making salads. This soup is a great way to get a variety of veggies in with little effort. It also is great for if your sick or your guts need some healing. I used this most recently when I was trying to get candida under control. For my bone broth recipe click here

 

 

Makes about oz

Ingredients:

  • 1 cauliflower head

  • 1 lb or 32 oz of broccoli 

  • 3 cloves of garlic

  • 1/2 onion

  • 1 tbsp salt

  • pinch of clove

  • 2 1/2 tbsp turmeric

  • 1 cup butternut (curbed)

  • 5 cups bone broth

  • 1/2 cup coconut oil

  • 4 large handfuls of greens(spinach, chard, kale)

 

Directions:

  • Chop up cauliflower and broccoli into chunks so it cooks faster unless its frozen 

  • Chop up garlic and onion and squash don't have to be perfect it will get blended later

  • Place in Large soup pot

  • pour in bone broth 

  • Add in oil

  • then cover veggies with water

  • Bring to a simmer

  • Stir in salt, clove, and turmeric

  • Simmer and stir till all veggies are soft

  • Once they are soft add in greens (spinach has the least taste but chard and kale are great)

  • Stir them in once they are wilted turn off the burner

  • A high powered blender works best I have a vitamix

  • Use a ladle and fill up your blender about 3/4 full, make sure you are getting some veggies and some broth so it blends nicely 

  • Pour into a large bowl (you may need two)

  • Repeat until all blended

  • Since this makes a lot you can pour some in to a freezer bag and save for later or use it in other recipes to boost your veggie intake
